Big Daddy's Chicken Sriracha Stir-Fry

I was watching Doctor Oz one afternoon and that is when I heard of this recipe; so I found it online and printed it out. I made it for dinner a few days later and it was incredible. I did not use chicken or any meat in this recipe, but you can add any type of meat to it that you want; I am sure it will be yummy. I just used more kidney beans in place of the chicken. Recipe does not belong to me.

Big Daddy's Chicken Sriracha Stir-Fry


Ingredients

Stir Fry

1 cup of kidney beans, drained
1lb chicken strips, cut in bite size chunks
2 cups broccoli florets, blanched
2 cups of sweet potatoes, match-stick cut
1 cup of red bell peppers, thinly sliced
2 tbsp grapeseed oil
2 tbsp sesame oil

Sweet and Spicy Sauce

1/4 cup low-sodium soy sauce
2 tbsp fresh garlic, chopped
2 tbsp fresh ginger, chopped
2 tbsp sesame oil
2 tbsp sriracha
2 tbsp rice wine vinegar
1 tbsp agave honey

In a medium bowl whisk together soy sauce, garlic, ginger, sesame oil, sriracha, rice wine vinegar, and agave honey; set aside. In a large non-stick pan on high heat, add oil and begin to saute chicken strips until golden brown for 4-6 mins or until desired level of doneness is reached. Remove chicken from pan and place on plate to rest. Add bell peppers, sweet potatoes, broccoli, and kidney beans, and quickly saute for 3-4 mins. Add the chicken back to pan along with the sweet and sour sauce. Toss until coated. Serve over brown rice.

  1. We love Sriracha too!! I'm going to have to try this recipe, We call it "Cock Sauce" because of the rooster on the Sriracha bottle, haha.
