I had no idea what to make for dinner yesterday so I just threw all of what I had together. I had a pack of ground chicken, onions, peppers, garlic, and etc. I didn't measure any of the spices as I put them in. I just went with what I thought would taste good in it and I guess it worked because everyone enjoyed it.

We had chili fried rice and steamed broccoli yesterday for dinner. It was so delicious. I was surprised when the kids and hubby loved it and requested that I make it again soon. 

Only problem with that is I didn't write down what I put in it. So last night I tried to write out the directions so I could remember how to make it again for the family. I didn't expect it to be that tasty. We decided the recipe should be called Chili Fried Rice.

Chili Fried Rice


2 1/2 cups of cooked rice

Olive oil or whatever oil you use

1lb ground chicken

1 red pepper diced up

1 green pepper diced up

1 jalapeno pepper diced up

1 onion diced up

4 garlic cloves small diced

1 can of black beans rinsed off


Salt, pepper, garlic powder, cayenne pepper, cumin, chili powder, turmeric powder, ginger powder, and Italian seasoning. I didn’t measure any of the spices I just went with what I thought would be best.


Directions:

Cook rice. Put oil in a big frying pan and start cooking ground chicken on medium/high heat. Don’t let it burn. Adjust temperature if needed. Cook meat for about 10 minutes or so. While meat is cooking cut up peppers, onion, and garlic. Add spices to meat. Turn heat down to medium/low. Add peppers, onions, and garlic to meat and cook until tender about 7 minutes or so you may need to add a little more oil so the peppers, onions and garlic can cook. Rinse black beans and add them to the frying pan and cook for about 5 minutes. Add rice when it is finished cooking. Add more spices and mix well. EAT and enjoy.
